Red radishes, red apples, red onion … maybe some red strawberries or red plums.
Crisp and sharp taste of radishes with the bitter bite of arugula, paired with the soft sweetness of fruit, topped with a honey-mustard vinaigrette.
Red Radish Salad
Number of Servings: 4
Salad Ingredients:
1 small bunch of radishes (10-12), trimmed and thinly sliced
1-2 cups of arugula – or a mix of spinach and arugula
¼ of a red onion, very thinly sliced
1/2 of a sweet red Delicious or Fuji apple, unpeeled, cored, thinly sliced
1-2 red plums, pitted and thinly sliced
4 or 5 fresh strawberries, hulled and thinly sliced
Honey Mustard Vinaigrette:
1 tablespoon (15 mL) fresh lemon juice
2 tablespoons (30 mL) Dijon mustard
2 tablespoons (30 mL) honey
3 tablespoons (45 mL) vegetable or grape seed oil
Sea salt; freshly ground black pepper
Method:
- Prepare vinaigrette: In a small bowl, mix lemon juice, mustard, and honey. Whisk in oil until the vinaigrette is thick. Season to taste.
- Place all salad ingredients into a large salad bowl and gently stir to combine.
- Place a serving of the salad on individual salad plates; drizzle vinaigrette over top.
