Salad #30 – Red Cabbage Slaw

A great partner for a burger, or a pulled pork sandwich!

Red Cabbage Slaw

Number of Servings: 6

Salad Ingredients:

2 cups of shredded red cabbage (1/3 of a head)
1 small bulb of fennel, shredded, or very thinly sliced
1 carrot, shredded
1 stalk of celery, diced or thinly sliced
¼ cup (60 mL) chopped green onions
1 apple, unpeeled, cored, and shredded or diced
2 tablespoons (30 mL) dried cranberries or raisins
¼ cup slivered almonds

Dressing:

1 clove of garlic, minced
1 teaspoon (5 mL) Dijon mustard
1 ½ tablespoons (25 mL) apple cider vinegar
1 teaspoon (5 mL) maple syrup
1 tablespoon (15 mL) vegetable or grapeseed oil
2 tablespoons (30 mL) mayonnaise
1 tablespoon (15 mL) sour cream
Sea salt; freshly ground black pepper

Method:

  1. Place shredded cabbage, fennel, carrots, celery, green onions, apple pieces, cranberries/raisins, and almonds in a large salad bowl. Stir to combine.
  2. Make Dressing: Combine garlic, mustard, vinegar and maple syrup in a small bowl. Whisk in oil. Stir in mayonnaise and sour cream.    Season to taste.
  3. Pour dressing over salad ingredients, and stir to combine.
