Sweet carrots with a bright and refreshing lime vinaigrette …perfect picnic salad!
Carrot Slaw
Number of Servings: 4
Salad Ingredients:
1# grated or ‘matchsticked’ carrots (5 or 6 carrots)
2 tablespoons (30 mL) chopped pickled jalapeno peppers
¼ cup (60 mL) chopped green onion
½ cup (125 mL) fresh, canned or dried pineapple pieces
¼ cup (60 mL) chopped fresh cilantro
¼ cup (60 mL) raisins
Vinaigrette:
2 tablespoons (30 mL) fresh lime juice
3 tablespoons (45 mL) vegetable or grapeseed oil
1 teaspoon (5 mL) honey
Sea salt; freshly ground black pepper
Method:
- Place all salad ingredients in a large salad bowl.
- Make vinaigrette: Mix together all ingredients; season to taste
- Pour vinaigrette over salad ingredients and stir to combine.
