A new year is just around the corner…
It is exciting to anticipate the fresh canvas that awaits new friendships, new ventures, new ideas, new challenges …all the while savouring and nurturing the richness that is in our lives at this moment.
Many of us use the ushering in of a new year as a reason to once again bring out special foods and beverages that reflect the essence of the occasion. And, since we may have over-indulged in the Christmas festivities, it is a welcomed change to have simple, flavourful bites to accompany the celebrations.
And marinated fresh mozzarella is just that! It is so easy to prepare …and then tuck it away in the fridge overnight. …and then it goes directly onto the serving platter. This idea has been around for awhile – and you can change it up to reflect your mood – maybe add some red chili flakes, or some dill … maybe add a cherry tomato and a basil leaf.
So easy! So delicious!

Marinated Bocconcini Balls
Prep Time: 10 minutes
Yield: 8-10 appetizer servings
Ingredients:
1 teaspoon (5 mL) fresh lemon juice
1 teaspoon (5 mL) fresh lemon zest
1 garlic clove, minced
2 teaspoons (10 mL) white balsamic vinegar
3 tablespoons (45 mL) extra virgin olive oil
Freshly ground pepper; Kosher salt
2 cups (500 g) of fresh bocconcini balls, cocktail size, drained
Method:
- In a small glass mixing bowl, whisk together the lemon juice, lemon zest, minced garlic, and vinegar. Whisk in oil. Season to taste with pepper and salt.
- Add the drained bocconcini balls to the bowl. Gently mix together.
- Cover and refrigerate for at least 6 hours. Stir up a few times during the marinating time.
- Let bocconcini come to room temperature before serving (15-20 minutes). Place a decorative pick in each ball.
