Salad #93 – Summer Fruit Salad

Fruit is the perfect summer salad.

Whatever fruit you find at the market will work in this salad.
Two vinaigrettes are provided, mostly because I could not decide which of the two I preferred.
Vinaigrette I is a raspberry jelly-based vinaigrette that highlights everything it touches;
Vinaigrette II features tequila and lime …who doesn’t love a summertime marguerita!

Summer Fruit Salad

Number of Servings: 4

Salad Ingredients:

Fresh strawberries, hulled and sliced
Fresh blackberries
Fresh blueberries
Fresh raspberries
Purple or yellow plums, pitted and thinly sliced
Peaches or nectarines, pitted and thinly sliced

2 tablespoons chopped fresh mint

Vinaigrette I:

3 tablespoons (45 mL) seedless raspberry jelly, melted
1 tablespoon (15 mL) apple cider vinegar – or other fruit vinegar
3-4 tablespoons (45-60 mL) vegetable or grapeseed oil
Sea salt

Vinaigrette II:

1 ½ tablespoons (25 mL) tequila
1 tablespoon (15 mL) fresh lime juice
1 teaspoon (5 mL) lime zest
1 tablespoon (15 mL) honey
3-4 tablespoons (45-60 mL) vegetable oil
Sea salt

Method:

  1. Prepare all fruit and place in a salad bowl.
  2. Prepare vinaigrette: Mix the components of your choice of vinaigrette.   Season with just a little salt.
  3. Pour vinaigrette over the fruit, and gently mix together.
  4. Garnish Salad I with some mint leaves; Garnish Salad II with some lime zest.
