Mixed Greens and Fruit Salad
Number of Servings: 4
Salad Ingredients:
1 fresh pear, unpeeled, cored, sliced or diced
1-2 fresh pluma, pits removed, cut into small wedges
1 cup of fresh blueberries
1 cup of fresh raspberries or strawberries
1 kiwi, peeled and sliced
2 tablespoons fresh mint
3-4 cups of mixed (soft, crisp, mild & bitter) greens, such as spinach, butter lettuce, nappa cabbage, romaine lettuce, endive, or radicchio
2 tablespoons of chopped green onions
Raspberry Vinaigrette:
2 tablespoons (30 mL) seedless raspberry jelly, melted
1 medium shallot, minced
1 tablespoon (15 mL) red wine vinegar (raspberry flavoured, if possible)
1 teaspoon (5 mL) Dijon mustard
¼ cup (60 mL) extra virgin olive oil
Sea Salt; freshly ground black pepper
Method:
- Prepare all fruit and place in a large salad bowl.
- Prepare vinaigrette: Mix melted jelly with shallot, mustard, and vinegar in a small bowl. Whisk in oil. Season to taste.
- At serving time; pour vinaigrette over fruit. Stir in the chopped mint. Place a mixture of greens on each salad plate, or on a large salad platter. Sprinkle with some chopped green onions. Spoon some fruit over the greens.
