Every once in awhile, we all need a little bit of comfort… This salad will do the trick!
Broccoli Comfort Salad
Number of Servings: 4
2-3 cups broccoli florets
½ cup (125 mL) cubed cheddar cheese
½ cup (125 mL) cubed ham
1 medium apple, diced
½ cup (125 mL) dried cranberries
¼ cup (60 mL) chopped red onion
2 tablespoons (30 mL) chopped fresh flat-leaf parsley
Sunflower or pumpkin seeds
1 tablespoon (15 mL) rice vinegar
2 teaspoons (10 mL) honey
2 tablespoons (30 mL) vegetable or grapeseed oil
3 tablespoons (45 mL) mayonnaise
Sea salt; freshly ground black pepper
- Place all salad ingredients, except almonds and pumpkin seeds, in a large salad bowl.
- In a small bowl, whisk together the vinegar, honey, and oil. Stir in mayonnaise; stir in salt and pepper to taste.
- Pour dressing over salad ingredients and gently mix together. Adjust seasonings, if necessary.
- Fold in sliced almonds and seeds.
