It seemed appropriate that the first salad to be highlighted in this 100 Day Project would be a replication of the very first salads – way back in the days of the Roman Empire … aptly and simply named Herba Salata.
- Herba, meaning greens, or any vegetation foraged from the wild
- Salata, from the root word, ‘sal’, meaning salt
What this would look like might be a fresh green leaf, a fresh tomato, or a radish …sprinkled with a little salt.
Today, a little extra virgin olive oil will be added to the table to complete a basic, simple Herba Salata.
There is wisdom in the adage: Keep it Simple.
Herba Salata
Number of Servings: 4
Salad Ingredients:
A small bowl of fresh radishes
A small bowl of fresh tomatoes
Some fresh lettuce leaves
Vinaigrette:
A small bowl of extra virgin olive oil, or some soft unsalted butter
A small bowl of sea salt
Method:
1. Dip a radish, or a tomato, or a leaf of lettuce into the olive oil (or butter), and sprinkle with a little salt. Enjoy!
