If heirlooms are not available, another vine-ripened, sun-kissed tomato will work beautifully in this salad.
Heirloom Tomato Salad
Number of Servings: 4
Salad Ingredients:
3-4 large fresh heirloom tomatoes
2-3 cups of a mixture of greens and herbs, such as:
- arugula
- butter lettuce
- mint leaves
- basil leaves
- tarragon leaves
- chopped flat-leaf parsley
- chopped chives or spring onions
Shaved Parmigiana-Reggiano cheese
Vinaigrette:
1 small shallot, minced
1 tablespoon (15 mL) Champagne, white wine, or white balsamic vinegar
1 teaspoon (5 mL) Dijon mustard
3 tablespoons (45 mL) extra virgin olive oil
Sea salt; freshly ground black pepper
Method:
- Make vinaigrette: Combine minced shallot, vinegar, and mustard. Whisk in olive oil. Season to taste. Set aside.
- Thinly slice tomatoes. Set aside.
- Combine your choices of greens and herbs in a large salad bowl.
- Lightly dress the greens/herbs with some of the vinaigrette. Place on a large platter, and decoratively arrange tomato slices over top. Drizzle with a little vinaigrette, or serve on the side.
- Garnish with extra herbs and shaved cheese.
